Voted No.24 on Asia’s 50 Best Restaurants 2021, Logy (actually ‘-logy’, as in the suffix relating to ‘study’ and ‘theory’) is a study in wood and concrete tucked away down a shadowy alleyway in the Daan district. Hokkaido-born Ryogo Tahara – formerly sous chef at revered big sister restaurant, Florilège, Tokyo – pays homage to the dynamism of Asia’s food scene with a menu that defies categorization. Techniques may be largely Japanese, but ingredients are local and there is also the odd nod to his time training in some of Italy’s top kitchens. Although menus change every two months, chances are a challenging yet delightful signature of chawanmushi (Japanese custard) with crab and celery sorbet in hot beef consommé will be on offer. Given that there are only 13 seats, it’s unsurprising that bookings are so hard to come by. They can be made online 60 days in advance – if you’re lucky.
