This burgundy-tinged restaurant has been setting the bar for Quebec’s fine-dining scene since it opened its doors in 1993. Normand Laprise favours creative, classic techniques that allow locally sourced ingredients from artisan farmers to take centre stage. Set menus change every day but may include the likes of milk-fed pork croquettes with white asparagus and pan-fried foie gras alongside strawberry and red pepper jelly. A seasonally changing cocktail list is rooted in homemade fruit juices, infusions and syrups, while a wine cellar with 6,000 bottles includes some of France’s most interesting small producers.
