What’s the hype? Inside the extravagant Wynn Palace complex, one can find Chef Tam’s Seasons (previously named Wing Lei Palace): the restaurant of the celebrated chef Tam Kwok Fung. The newly re-monikered restaurant showcases refined Cantonese cuisine, featuring the finest seasonal produce in the most opulent surroundings.
On the menu: With both à la carte and tasting menu offerings, Chef Tam’s Seasons offers a wide selection of dishes, including signatures such as crispy sea cucumber filled with minced shrimp, roasted goose with plum sauce and steamed French blue lobster with egg white and caviar. There’s also a wide selection of live seafood, as well as bird’s nest soups, barbecued meats and dim sum.
Palatial by name, palatial by nature: The interior of Chef Tam’s Seasons leans into the name and opulence of its host hotel. Gold, jewels and emerald jade line its every surface, with a lush floral garden in the entrance featuring more than 5,000 roses, hydrangeas and exotic flowers. The pièce de résistance is the view onto the resort’s Performance Lake, where graceful plumes of water spring into spectacular action at regular intervals.
About the chef: Earning his reputation at the renowned Jade Dragon in Macau, Chef Tam moved to the Wynn location in 2018 and earned Wing Lei Palace its No.36 position in the 2019 ranking of Asia’s 50 Best Restaurants. He has cooked for politicians and royal families and won a gold medal in the World Champion of Chinese Cooking competition. In 2024, the restaurant has retained its title as The Best Restaurant in Macau.
