Born in Thailand and raised internationally, Chef Kewkacha’s multicultural upbringing has profoundly influenced his culinary perspective. Initially pursuing a master’s degree in tourism, he never envisioned a career in the kitchen. However, at the age of 22, he took a leap of faith, launching Kacha Brothers with his siblings. This venture blossomed into a successful group that now operates more than 50 food and beverage outlets, including the acclaimed Kyo Roll En, Thailand's leading Japanese dessert café.
Chef Kewkacha’s entrepreneurial spirit, coupled with his tailored approach to dessert creation is exemplified through his philosophy of experimentation, unbound by the traditional constraints of culinary school. His experiences living in places like Japan, Singapore and London have enriched his palate and inspired him to incorporate a global outlook to his flagship dessert bar, Kyo Bar, where he presents an evolving omakase-style menu, showcasing the finest Japanese and Thai ingredients.
His tenure as executive pastry chef for Gaggan at Louis Vuitton in Bangkok further solidified his reputation as a leading pastry chef. Here, he has continued to refine his craft, fashioning desserts that spotlight unconventional textures and flavour combinations, often incorporating herbs and vegetables to reflect the luxurious brand ethos of Louis Vuitton, the vibrant flavours of Thai cuisine and the whimsical undertones of the Gaggan brand.
In 2023, Chef Kewkacha was awarded World’s Best Pastry Talent 2023 by La Liste, propelling him forward in his commitment towards elevating Thai desserts on the world stage. His career thus far exemplifies the power of artistic imagination, making Chef Dej Kewkacha a true luminary in the world of desserts.
