One of Seoul’s newest speakeasies, Pine & Co might be tricky to find – secreted as it is down a dark Apgujeong-dong back alley – but those who find it are rewarded with a surprisingly complex bar serving seriously creative cocktails. At first glance, the service bar wouldn’t look out of place in a sci-fi film, with vacuum packing machines, a rotovap and sous vide tech on proud display. However, to assume that the service is as sterile as the R&D bar might suggest would be a mistake.

The name Pine & Co holds a double meaning that speaks to the philosophy that defines the bar. The pine tree symbolises longevity, while the pineapple represents good hospitality. There are low leather couches and bookshelves with flickering candles, reading material and curios strewn about to give what could be a cold lab space a cosy lounge effect.

The cocktails are, unsurprisingly, experimental with an eye on sustainability and often combine unconventional flavours. Take the Ant Love Corn, a sweet, creamy drink made with homemade corn milk, tea and tequila served alongside a homemade chocolate taco packed inside a mini ice cream cone and topped with edible ants.  Alternatively, try the Coffee & Cream, which repurposes spent coffee grounds from local cafes into a delicious, multi-layered drink.
