Pull a Tasmanian-oak stool up to the bar to see chef Josh Lewis – formerly sous chef at Loam in Victoria's Bellarine Peninsula – crafting sophisticated small-plates that focus on a single primary ingredient, such as a Ballina king prawn, dissected and roasted in black garlic oil. Astrid McCormack, co-owner and Josh’s wife, oversees the front of house with a charm that continues the illusion of dining in a private home, although you’d be hard pressed to find one with such an accomplished wine cellar.
