Rosenbaum & Fuller is a bar named after its founder Lee Potter Cavanagh's two grandmothers, and it follows that the whole venture is defined by heritage, not just that of one man but of the land it is built on. A tribute to the Indigenous Australians and the Aboriginal tribes who never ceded the territory, the menu is dominated by Indigenous-owned brands and Aussie ingredients. Potter Cavanagh is a celebrated bartender, who built his name both in London and in his home country, so drinks are appropriately accomplished - try the Cranbrook: brandy, amer, apricot brandy and fig leaf. A menu of similarly all-Australian dishes is available too, like the signature R&F maccheroncini: cacio e pepe mixed with kangaroo sausage.
