Inspired by Boston gangs of old, The Baxter Inn is tucked away in a basement down an alley in central Sydney. This candlelit joint’s speciality is whisky, as evidenced by the large board behind the bar listing the encyclopaedic collection. Cocktails aren't overlooked, though. Take the spritz-style ‘A History of Violets’, which combines gin, mango, pineapple, violet and amaro. There's an extensive beer and wine selection to accompany all this too, not to mention a fine Old Fashioned on tap.
