The Waratah

The Waratah, set over two floors, pays tribute to Australia’s local growers, produce and landscape through its cocktails and food. This Darlinghurst bar and restaurant is a comfortable, welcoming space, complete with terrace bar and wraparound veranda, not to mention a striking ceiling mural by local artist Sarah McCloskey. Each edition of the cocktail menu focuses on a particular region, with each drink highlighting a particular grower or producer – everything from dairy farmers to winemakers. The drinks themselves are a remarkable showcase of Australian flavours and products, including feijoa (sweet and floral native fruit), locally-grown olives, Australian sake and more. Among the highlights from the Hunter Valley menu is the Milk & Wattle, combining cognac, milk gelato, wattleseed coffee, plum and sherry, as well as the non-alcoholic Yuzu & Flowers, made with Hunter Valley yuzu and more. Food, meanwhile, spans everything from oysters and lobster rolls to a 600g wagyu sirloin.
