Surrounded by the steep slopes of the mountainous Zug valley in Austria’s Arlberg, Klösterle occupies a traditional 16th-century wooden building and, although the welcome is as warm as the cosy setting suggests, the cooking is bang up to date. Husband and wife chef duo Jakob Zeller and Ethel Hoon are Italian and Singaporean respectively and met during a three-year stint at Fäviken in Sweden, which was perhaps the world’s ultimate destination restaurant (Klösterle isn’t quite so hard to reach). Singaporean influences – fish soup ‘tom yum talay’ – are occasional on a menu inspired by the stunning Alpine setting, with trout from Lake Constance and carp from Lower Austria appearing alongside ingredients such as mountain pine, salted chanterelles and milk curd.
