Chef Christophe Hardiquest has given an ultra-contemporary new look to a historic villa by the Arboretum Tervuren forest in Brussels, which is referenced in the restaurant’s design through a wooden layered ceiling that hangs over diners as though they are sitting under the branches of a tree. Beneath it is the open kitchen and a curved walnut wooden counter, where up to 26 guests are seated side by side, where they can watch the chefs at work in the style of a Japanese omakase restaurant.From the other side, Hardiquest and his team serve up plates of contemporary Franco-Belgian cuisine inspired by the seasons and nearby nature, think signature dishes of Zeeland oyster jewels with vodka tonic jelly, and peppermint, gnocchi and nettle soup, or Racan pigeon cooked in pods and hay, cocoa-chilli liqueur and pepper beer, potato ‘terre-mille and pumpkin gratin. Such delights are complemented by homemade bread, homegrown herbs and a strong organic and natural wine list.
