The Boury name not only applies to hot-shot chef Tim Boury: his partner Inge Waeles oversees front of house, where she is supported by Tim’s brother Ben. Having worked in big Belgian and Dutch names such as Comme Chez Soi and Oud Sluis, Tim opened Boury in Brussels before relocating to an elegant 1950s villa in suburban Roeselare, south of Bruges, where he has picked up pretty much every award going in Belgium. In fine weather, pre- and post-dinner drinks are taken on a terrace by a large garden which produces herbs and veg for the kitchen, while the clean-lined interiors are no less light-filled. Menus (both à la carte and tasting) feature contemporary presentation of classical ingredients: North Sea turbot and European lobster with cabbage, young spinach, potato and lobster béarnaise, say. Three guest rooms (called Beluga, Sevruga and Oscietra) offer bed and breakfast.
