Ingredients are all indigenous to the country, a detail owner Dennis Llusco is inherently proud of.Born on the shores of Lake Titicaca, Llusco was raised with a gumption for good tastes. She went on to work top kitchens in Bolivia and Brazil before realising she wanted one of her own. Enter La Rufina: a riff on everyday dishes but a pretty artisanal take on that. Fans of fried things will love the rellenos, while the more adventurous should take to the rib and peanut consommé or the beef heart with seven types of chilli.
