Every season, he draws inspiration from a specific region, plucking ingredients, ideas and recipes from the destination to explore in depth in the kitchen. Expect creative interpretations of indigenous ingredients like umbu, jaca and licuri, served in intricate plates such as brioche with mate, oxtail with Brazilian nuts, and caju with fish roe. Inside, the restaurant's fantastical design features curvaceous seating beneath an 18-metre ceiling illuminated with kaleidoscopic nature scenes, while guests watch the team at work in a sleek, glass-fronted kitchen.
