SubAstor is the yin to upstairs neighbour Bar Astor’s yang. A dark, sexy theatre of mixology, its speakeasy vibe is well served by moody red walls, a long bar and several low-slung tables. The bartenders – among Brazil’s best – work with speed and grace to put the hand-chopped ice into the likes of the ‘Tereré’ (light Cuban rum, cachaça, Saint-Germain, lemon, chimarrão and cambuci jam). And they are equally happy to devise an original pour to suit guests’ preferences. While celebrating SubAstor’s tenth anniversary in early 2019, the group behind the bar opened Bar do Cofre SubAstor, sat inside the vault of one of São Paulo’s most historic banks.
