Look out for icebergs and sea birds on the horizon as you feast on contemporary plates representing Fogo Island’s subarctic setting in the Labrador Current. Chef Timothy Charles' food menu also works in symbiosis with its surrounds with a zero-waste mission. 80% of ingredients used within the menu are sourced from the island, including edible plants harvested from the shorelines and vegetables from local producers. Menus resultingly change often, but are always rooted in telling the stories of the farmers, fishers and foragers who fill the restaurant's pantry. Beyond the walls of its own dining room, Fogo operates as a community-owned business, meaning it invests any surplus back into the local community.
