It seems almost surreal that one of Chile’s finest Japanese restaurants sits atop a Santiago shopping mall, but Fukasawa defies expectations. Created by Chilean-born chef Marcos Baeza and his twin sons Marcus and Lucas, this polished space pays homage to his late Japanese mentor, Naoki Fukasawa, under whom he trained at the now-closed Sakura. The menu brings together Japanese tradition with Chilean ingredients: the soft shell crab temaki delivers crunch, brine and wasabi heat, while the risotto uni ikura is pure indulgence topped with buttery sea urchin and delicate salmon roe.
