As Italian as Aperol and Vespas combined, this larger-than-life restaurant is the high priest of Asia’s Italian dining scene. Not only is it named after chef owner Umberto Bombana’s favourite Fellini film, it also offers classic Italian hospitality on a level rarely found outside the Motherland. Sharply dressed couples sip negronis (fortified with sweet wine and grapefruit bitters) at the aperitivo bar, besuited waiters speak knowledgably about the flavour profile of different Italian wine regions and snowy tablecloths are reflected in a mirrored ceiling installation. The tasting menu waltzes gracefully through five courses that change with the seasons but generally start with seafood and move on to pasta (when in season incorporating white truffle, Bombana’s signature ingredient), meat and decadent desserts.
