The flagship bar inside The St. Regis brings looks to Golden Age New York as the inspiration for its interior, drinks programme and opulent aura. Macau has a surplus of glitzy interiors, so The St. Regis taps into a timeless feeling of luxury, with plush furnishings, warm lighting, live jazz, and a stunning onyx bar as a centrepiece. Behind the bar is mixologist and Tapei-native Kevin Lai, who joined its team in November 2022 after working at Hope & Sesame Guangzhou, Cattail in Beijing and Taipei’s Bar Mood. Following the bar’s design, Lai’s drinks programme takes equal heed to The Big Apple, with a menu of retouched classic concoctions inspired by the city’s five boroughs. Take the Garnet Sour, a classic New York Sour with ruby port added as a nod to the history of Portuguese immigration into the city. The Maria do Leste sees the bloody mary infused with flavours from chapters of the city’s history with Brazilian lime, Angolan piri piri, Indian cinnamon, Chinese peppercorns and creating a singular Macanese taste profile.
