A visit to this exclusive Changning restaurant requires preparation, as many of the dishes must be pre-ordered before dining. Owner Du Jianqing brings the flavours of the Chaoshan region of China’s Guangdong province to life, serving characteristically light and delicate seafood and vegetarian food, with a focus on poaching, steaming and braising. Housed in an elegant white villa, the restaurant is a paragon of sophistication and exclusivity: dining only takes place in five smartly presented private rooms. The nuanced flavours coming from the kitchen are mirrored by the intricately patterned porcelain used for service. Signature dishes include chilled crab with marinated raw mantis shrimp. Another standout is the crispy sea cucumber, which requires several days to prepare. Du Jianqing now oversees four establishments – but the original remains the pinnacle, providing an exclusive and refined culinary experience.
