So much so that the Burgundy-born Maison Lameloise, boasting more than 90 years of heritage and three Michelin stars, felt the need to bring its tiny village feel to a flying-high outpost with views over The Bund in Shanghai in 2018.With extensive training in top French kitchens, Éric Pras was tasked with the transfer, and has trained a stellar team to follow in his footsteps. Now, it’s a perfect mix of European precision with Chinese modernisation: Sichuan trout might come in a Chardonnay sauce topped with caviar, while scallopsouffle paird with sour shallots. Opt for a tasting menu: it’s lavish and bold, but it’s the best way to splurge – kicking off with the overflowing bread basket – while looking out over the cosmopolitan cityscape.
