Set in a three-storey, century-old Shanghai mansion, the Moose dining room occupies the building’s ground flour, with private dining rooms upstairs. Form and function go hand in hand here: a 2018 makeover resulted in a stylish all-white decor punctuated by oil paintings and antlers on the walls (though Moose does not appear on the menu). The punchy Huaiyang cuisine, meanwhile, reflects the chef’s 30 years of experience; witness signature dish crispy white teat fish (a kind of sea cucumber) served with spring onions, which arrives in a crispy crust. The eight treasures gourd duck, filled with rice and Chinese delicacies, is equally inspiring, while the fried anchovies will never be forgotten. On a mild night, opt to dine in the tranquil garden, which easily rivals the interior’s high style.
