From the same people behind Shanghai’s Light & Salt group comes The Pine at Rui Jin, an upmarket French restaurant set in the InterContinental Shanghai Ruijin, overlooking its beautiful garden. The airy dining room boasts pale, filigree panelling, rattan seating and floor-to-ceiling French doors, which are flung open when weather allows. Chef Johnston Teo is loved locally for his three-course lunch and six- and eight-course dinner menus, along with a formidable à la carte offering. Representative is a plate of buttery capellini, enlivened with chives and salty ham, in addition to girolles galore, black truffle and a scattering of comté cheese. A wonderful wine list and dreamy desserts, courtesy of acclaimed pastry chef Junstyne Wu, complete the very attractive picture.
