At Manuel, gorgeous vaulted ceilings meet tiled floors, textured walls and plush velvet banquettes to create a refined yet relaxed dining room that's dedicated to the best produce Colombia has to offer, infused with a touch of classic European technique. Owner Manuel Mendoza hails from Barranquilla and is on a mission to showcase the culinary traditions of the country's Caribbean Coast in dishes like fresh fish cooked over charcoal with spicy chivato pepper butter, warm black bean salad and fish demiglace, or a crab, with tatemado-grilled avocado, coriander and a casserole sauce. It's not all seafood though and South America's favourite cut of steak – the picaña – also makes a welcome appearance roasted in a charcoal-fired oven then paired with silky cassava purée and a vibrant chimichurri.
