One of Costa Rica’s most ambitious and exciting restaurants, Conservatorium has considerable culinary clout. A triumvirate of cooking talent is behind this creative powerhouse: Le Cordon Bleu Mexico-trained chefs Henry Quesada and Aldo Elizondo, and chef Kid Mey Chan, who riffs on his Asian heritage when devising sweet treats. Ideas are dreamed up and refined in the R&D lab, like a starter of cheese and beets with chocolate beet cookie ‘soil’, green olive powder and beet sour cream. The steaks too – pastured meats dry-aged from 21 to 100 days with chemical precision – garner rave reviews. But don’t swerve the artistically presented small plates: the herb and trout terrarium, or the watermelon tartare with mango and ginger yolk, black sesame caviar and crunchy bread ‘sand’, for example. Cocktails are equally inventive and there’s also a well-stocked wine list.
