Gedulgt is the Danish word for stealth, which stands to reason as this bar is a proper speakeasy, hidden away in a back alley behind an unmarked green door. Once you're in, the decor is austere to the point of resembling a laboratory, with pops of colour coming from the back bar and from the drinks themselves. The menu is split into three sections: 'All Over the World' which pairs local ingredients with global liquor; 'Out of this World' which lets the team run riot with innovative techniques; and finally 'The Beginning of the World', which delves deep into cocktail history.
