Located behind a vast wooden door and palm-leaf thatched wall in the Dominican Republic’s capital, Ajualä has flung Venezuelan-born, Paris-trained chef and co-owner Saverio Stassi into Santo Domingo’s culinary spotlight. Opened in 2019, the airy, modern space is arranged across an upscale dining room and balmy al fresco terrace. Expect a showcase of Dominican produce at its best, with 90 per cent of kitchen ingredients locally sourced to produce dishes reflecting the island’s diverse cuisine. Caribbean, Italian and South American flavours marry in dishes such as cativía, an empanada made from deep-fried yucca and filled with codfish stew, and yucca gnocchi served with wild mushrooms. Choose between a tasting menu and an expansive a la carte offering of sharing plates. An extensive range of wines – with more than 100 available by the glass – innovative cocktail selection, plus locally loved soft drinks like Malta India and Coco Rico complete the experience.
