El Xolo is a tribute to El Salvador's native Criollo corn in all its guises and also acts as a business supporting indigenous communities by cooking with ingredients they have nurtured. Dishes are bold and brilliant in their technique and their flavours and include fish with macha ponzu, cilantro and fried corn or a dessert of smoked pineapple, pineapple foam, cocada (traditional Latin American coconut candy) and dried chilli foam. There's also an outstanding selection of craft cocktails on offer, while the restaurant interior has a cool but earthy feel with rough-hewn walls featuring illuminated cubby holes that display traditional cooking equipment and an abundance of greenery. The restaurant has also been placed at number 91 in the list of The 50 Best Restaurants in Latin America 2022 and, if that wasn't alluring enough, El Xolo also hosts a series of chef collaboration dinners that are well worth checking out.
