Housed in an elegant 17th-century residence in the heart of Colmar’s Little Venice, Jean-Yves Schillinger’s canal-side restaurant impresses with its style and substance. Boasting burnished, XL-sized Chesterfield sofas and flattering lighting, the contemporary dining area wouldn’t seem out of place in New York City. As for the food, Schillinger’s style marries whimsy with technical brilliance. An amuse bouche sees fat olives dangling off S-hooks attached to a potted olive branch; barbecued oysters come slathered in algae butter and slivers of chorizo; and Alsatian pigeon breast is paired with bitter chocolate and Moroccan spice.
