Housed in a series of 18th-century buildings, this revered restaurant has held three Michelin stars for more than 40 years. Here, the late Michel Guérard, one of the pioneers of nouvelle cuisine, combined history, nature and creativity to thrilling effect. Menus focus on flame-grilling and local ingredients. Langoustines and foie gras smoked on embers sits alongside seared sweetbreads, while a tangy pain perdu is a satisfying way to finish. The exclusively French wine list has a particularly good selection from Bordeaux.
