L'Auberge du Vieux Puits

Fontjoncouse, France

A rural ‘auberge’ knocking out sophisticated French flavours and divine desserts. Marie-Christine and chef Gilles Goujon opened L’Auberge du Vieux Puits in 1992 and have developed it with passion and precision. Signatures include a confit cherry in spiced red wine sauce with a verbena and mascarpone tiramisu; and a whole Menton lemon with citrus and bergamot sorbet, kumquat, lemon thyme cream and crispy meringue. The airy rooms around the pool or in the ‘House of the Chefs’ show off the best of the surrounding Aude countryside.
