Jean-André Charial – grandson of founder Raymond Thuilier – brings a subtle, colourful touch to menus based on organic produce grown in the restaurant’s own garden. Think red mullet in farmhouse cream, blue lobster on a bed of baby leeks and milk-fed lamb in lemon-laced thyme juice. An impressive wine cellar contains more than 60,000 bottles, including many that are more than 150 years old. Discreet service attracts very well-known guests while the enormous terrace is a bucolic place to spend an afternoon.
