Perched dramatically on the rocks of fishing haven Vallon des Auffes, L' Épuisette, named after a type of fishing net, is as famed for its views as it is for its bouillabaisse. Inside, a large mirror reflects the islands scattered off the coast, with fabric drapes cleverly used to divide the space and create more intimate areas. Run by Guillaume Sourrieu, who trained under Bernard Loiseau, among other top French chefs, the set four-course menu leans towards local small-boat catch of the day in classic dishes such as a signature prawn terrine and slow-cooked sea bass.
