Aperture was founded by Julien Escot, who was also responsible for Paris' dearly-departed Baton Rouge cocktail bar. So – in essence – you know it's going to be good. The distinctive interior has a touch of the David Lynch about it, with hot pink neon lights suspended from the vaulted stone ceilings, a central mirrored bar and emerald velvet seating. The cocktail list is split between highballs and original cocktails, with the Summer 2021 menu including creations like the Strawberry Sherbert, which blends cardamom vodka, strawberry sorbet, strawberry and elderberry cordial and cranberry juice. It's no surprise that Aperture has already won a clutch of awards since opening in 2019.
