Hôtel Le Chabichou stands out for its white wooden exterior. Inside, however, it’s the Michelin two-star cuisine that draws attention: this is not a place to turn up without reservations. Stéphane Buron runs the pass at the stunning new-look restaurant, which emerged from a refurbishment in late 2019 after a change in ownership. The talented chef melds local ingredients with time-honoured techniques. A typical lunch may comprise green asparagus mimosas with truffle vinaigrette sauce, followed by roast John Dory in an oyster sauce with spelt risotto, culminating in a never-to-be forgotten lemon tart. Cooking classes are also available.
