The team behind One Trick Pony in the little German city of Freiburg describe their ethos as 'Fine drinks & diving', and it's that sweet spot between dive bars and accomplished cocktails where you'll find many of our favourite joints. This one is no exception. Whilst the front of house is all stripped-back brick and funky wallpaper, behind the scenes the team is hard at work creating their own bespoke ingredients with a collection of intimidating-looking equipment. Drinks are creative and eminently drinkable, making use of lesser-known ingredients from around the world – take the Karrotizen Kane for example, where Clairin (Haiti's national take on rum) is centre stage, mixed with passion fruit, carrot, sugar and lime.
