Just six months into opening his eponymous Munich restaurant, Jan Hartwig received three Michelin stars for his efforts. Located a few blocks north of the city Hauptbahnhof, the chef’s second restaurant in the Bavarian capital is a masterclass in precision cooking. Front-of-house service from maître d’ Kilian Skalet and sommelier Jochen Benz is similarly flawless. The menu, a fixed seven-course affair that’s shortened for lunch (and which can be extended with supplementary courses of Hartwig’s signature dishes), capitalises on the chef’s sleek, stylish haute cuisine. Courses are miniature artworks on a plate, and frequently are surprisingly colourful: a foie gras wonton dumpling arrives glazed a shocking shade of beetroot red, while slivers of arctic char share the plate with an onion broth split by verdant kaffir lime oil. Note the sign above an archway offering a glimpse into the clockwork workings of the restaurant’s kitchen, the “Labor Der Liebe” – laboratory of love. A fitting detail for Hartwig’s paragon.
