Essigbrätlein
Nuremberg, Germany
Ring the bell of this Nuremburg townhouse to become part of gastronomic history. Essigbrätlein – opened by self-taught chef Andree Köthe in 1989 – is the latest in a long line of restaurants to reside in the 500-year-old building. A cosy, old-world style pervades within the pocket-sized dining room. Here, Köthe and his right hand, Yves Ollech, are known for their innovative use of humble ingredients, herbs and spices. Watch it play out in the likes of marinated trout with confit lemon, pickled beetroot and an elderberry and whey sauce, lamb with cucumber and red cabbage ice cream with blackberries and chervil.
