On first glance this celebratory restaurant in honey-coloured Hotel Schloss couldn’t be much more traditional. The setting: the rolling vineyards of the Moselle region. The décor: white tablecloths, vases of lilies, silver ice buckets. However, the odd incongruous carved Buddha head is the first sign that something unexpected could be on the cards. Christian Bau has been at the helm since 1998 and was one of the first chefs to marry French haute cuisine with Japanese ingredients – a signature style that has since birthed a fleet of copycats. His Seafood-focussed ‘Paris-Tokyo’ tasting menu has been created in the spirit of traditional ‘kaiseki’ (a style of formal dining in Japan) and every dish is designed to appeal to each one of the diners’ senses. Expect exquisite presentation throughout.
