Chef Arnaud Bignon presides over an exclusively French menu featuring artful dishes such as lamb cooked with wild garlic vinegar, miso eggplant and black curry, or sweetbreads with Jerusalem artichoke, and flavoured with coffee and liquorice. Its cellar, the talk of the town, holds more than 1,300 labels.
