Globetrotting chef Vineet Bhatia opened Ziya in 2010 and it is still one of the most thrilling spots in Mumbai to try contemporary Indian cuisine filtered through a western perspective. Tasting menus of seven to 10 courses prepared in a glass-walled kitchen are the house speciality, or there’s a well-edited à la carte too. Subtle spicing and well-judged sauces allow some premium ingredients to shine in attractively presented dishes that look as good as they taste, while sides of naan and roti are just as diverting as the main event. Wine-matching is a strength while the setting is as memorable as the food: a lavishly furnished first-floor dining room within the Oberoi hotel at Nariman Point, where the well-spaced tables have stunning views over the Arabian Sea.
