Perched atop Raffles Bali, Rumari offers an extraordinary dining experience from sunrise to moonlight. Mornings feature Jimbaran Bay views and indulgent breakfasts, from 60-degree duck eggs with caviar to lobster omelettes with Indonesian heritage dishes like volcanic rice porridge and nasi uduk rounding out the menu. As evening descends, Rumari – meaning “house of the full moon” – transforms into a celestial culinary retreat, showcasing the rich flavours of the Indonesian archipelago. Culinary director Gaetan Biesuz crafts inventive six or nine-course degustation menus, sourcing 80 per cent of ingredients locally. Dishes highlight regions of the archipelago, with standouts like West Sumatran mud crab with green chilli and ginger flower and Betutu, a tender duck dish with foie gras, cabbage and pasta. The wine list, of more than 250 labels, highlights independent winemakers from around the globe.
