A blink-and-you’ll-miss-it kinda place, this Lilliputian dining room is the embodiment of modern Israeli cooking. It’s the brainchild of Asaf and Yotam Doktor – brothers by culinary conviction as well as by blood – inspired by the desire to experiment with all-Israeli produce. The result is an outstanding take on locavorian cuisine that sings with influence from the foodways of the entire Jewish diaspora, with only sugar and black peppercorns imported. It’s a labour of love that sees the chefs eking out suppliers across the country from co-ops to back-yard growers. Add to that the treatment of those ingredients – perhaps serving immediately, or maturing for months in house – and you’ve got a whole lot of love on the plate. Everything is done in sight during service, withtwo small tables and eight intimate counter perches framing the open kitchen. The menu changes nearly daily, but examples include baked kohlrabi with poppy seeds, thyme and crumbled cheese, chopped beef with a ‘tartare’ of mayo, wild snapper, sour watermelon shells and sourdough pickled in hosrum juice. Order up one of Asaf’s G&Ts – gin from Galilee, tonic made by hand from the caramelised juice of bitter oranges grown out back – sit back and soak it all up.
