Sequestered within 1,500 hectares of romantic Umbrian countryside, this dreamy estate sent ripples across the hospitality world upon opening in 2021. Painstakingly restored over 30 years, the historic property was as notable for its long gestation as it was for its owner’s dedication to preserving past character and biodiversity. Count Antonio Bolza bought the Italian estate in 1994 as a ragtag collection of farm buildings, ruins and oak woodlands. It took his entire family’s effort – plus the skills of master craftspeople– to revive the hill-encircled property. Now, the old Etruscan castle and its ancient church have been reimagined as a 36-key hotel. Bolzas’ architect son and his artist wife left the castle’s original features in place, adding bespoke furnishings to create elegant, muted interiors. Note the in-room bars, which include the estate’s own gin. Beyond the castle walls, there are olive groves, vineyards and lakes to wonder, an equestrian centre and swimming pool, as well as clay pigeon shooting, cookery and foraging. A farm-to-table policy guides two restaurants – one of a number of sustainability measures put in place to protect the landscape. The gem here, though, is in the old wine cellar, which is now a soothing, softly lit spa.
