The international port of Marina di Ravenna, on Italy’s east coast, is home to a remarkable rum collection, housed within the walls of Aguardiente. This temple to sugarcane spirits features more than 2,200 bottles, some of which go into making a collection of 24 cocktails, from twists on classics to traditional Caribbean and South American drinks. The menu here takes the form of a 180-page tome which, in addition to information about those cocktails, features an extensive visual account of Haiti’s distilleries, as well as the country’s landscape and people. Inspired by a number of trips to the Caribbean, owner Jimmy Bertazzoli has created a fitting home for this collection of rums, also offering a selection of organic wines and a number of champagnes, all set to a jazz soundtrack.
