With its tiled floors and tangerine-painted walls, Santo Palato looks every inch the retro trattoria, but it is in fact a relatively new kid on the block and a favourite with Rome’s young creatives. Rising talent Sarah Cicolini won fans for her yolky carbonara recipe, however, it is her use of offal that is garnering the most attention. Menus are chalked up fresh daily and may include the likes of chicken giblet and liver omelette or rigatoni with pork jowl and pecorino. This is a quality casual dining spot to be savoured.
