The leading voice of Ladin cuisine (an ancient culture from the remote South Tyrolian Alps), his menus hinge on the wild game and alpine herbs he finds on his doorstep. Think suckling pig's head with cucumber and flowers and sweetbreads in pine and sorrel jus, presented with minimalist flare.
