Ca Sento takes its name from the eponymous restaurant in Valencia, Spain where Chef Fukumoto did a stint in his twenties. Now an energetic fortysomething, Fukumoto delights Kobe diners with a menu of Spanish snacks and classics given a new lease of life through the use of premium Japanese ingredients. Cooking techniques are gainfully employed to bring out the very best in produce: tomatoes picked that day from local Inagaki Farm and served as part of a six-tapas selection of appetisers are a sweet-sour wonder; local seafood is flashed on the grill in the same way it is famously cooked around San Sebastián. The contemporary, monochromatic 20-seater dining room is elegant but understated.
