Reminiscence is an immersive deep dive into the point of view of Masaki Kuzuhara, who opened the restaurant on his 30th birthday in 2015. Everything you see forms part of the chef’s singular vision, from the bright white dining room with its eight tables to the tableware that the chef handpicked to amplify the qualities of each dish. Kuzuhara trained at two of Japan’s best French restaurants – Quintessence in Tokyo and Hajime in Osaka – before returning to his hometown of Nagoya to explore an idea of French cuisine based around the notions of afterglow and memory. The results are executed in a dozen dishes on a menu whose terse descriptions reveal little of the complexity to come. The chef’s signature eel dish, for instance, is grilled using the same charcoal as at 150-year-old Nagoya eel specialist Houraiken and the sauces change with the seasons; everything from bread to coffee displays the same dedication to sourcing the best ingredients, not least a Burgundy-heavy wine list.
