A warm slither of a restaurant lined with copper-coloured wood and honey-hued tiles. Yoshifumi Mori has been injecting a healthy dose of creativity into the kaiseki format (a traditional Japanese multi-course set menu) for more than 40 years. Dishes nod politely to Japanese tradition before trotting merrily past it to France, India and Italy. Think curry bread with coffee oil, caciocavallo cheese that has more than the suggestion of nori (seaweed) and a signature wagyu beef mille-feuille. A character every bit as flamboyant as his food, Mori greets all his guests personally.
